Prosciutto

Easy to prepare foods that taste great are one of our favorite things.
Simplicity of ingredients means you don’t and shouldn’t mess with them
to have a wonderful offering.
To wit, we recently had some high quality prosciutto from Claro’s Deli
(original location at 1003 East Valley Blvd.San Gabriel, CA, 91776 with
others in the San Gabriel Valley), highest quality ricotta from Gioai
Cheese Company (1605 Potrero Ave, South El Monte, CA 91733), some fresh
green onions and fresh thyme from our garden. Here's what we did:
Highest quality prosciutto
Highest quality ricotta
1 green onion
1 tsp thyme
Few drops half and half
Mince 1 green onion, using about 1/2 the green along with the white part.
Snip about 1 tsp of thyme, mince fine, Place 1 cup of ricotta in a
bowl, add onion and thyme and enough half and half to soften, but not
dripping. Mix vigorously to combine flavors. Set aside.
Separate prosciutto into very approximate 3 x 5 slices. Place dab,
about 1/2 T of cheese mixture near one end, roll up.
Serve, as is, or use a fancy toothpick to secure the roll.
This simple combination is totally dependent on your ingredients, so
don’t skimp. It is also totally delicious with our 2007 Merlot.
